Caribbean Breakfast - Salt Mackerel and Food

Breakfast is indeed the most important meal of the day so it's only right that we make it our best meal of the day!

Salt Mackerel & Food (provisions) Quick Fix Recipe:::

  • Boil the Mackerel in plain water for 7-10 minutes (to extract the salt)

  • Cut up your fresh seasoning (onion, thyme, scotch bonnet peppers, bell peppers, tomatoes, scallion)

  • Make dumplings (water, flour, pinch of salt)

  • Prepare provisions to be boiled in a big pot (peel yams, banana, sweet potato, pumpkin and Irish potato) with water and a tablespoon of salt

  • Drain your Mackerel, cool and pickle it.

  • In a big frying pan or Dutch Pot add coconut oil: once it's hot add thyme then the Salt Mackerel: add scotch bonnet and stir occasionally. add your seasoning except for the tomatoes stirring occasionally. Add tomatoes for the last 5-7 minutes and stir. Turn off the fire

  • Food (provisions) should be ready after 20-25 mins of boiling.

  • Remove from flame and begin plating. Add pear 🥑 (some call it avocado) and eat away.

  • Call and invite us to partake...okay that last step is optional, but Caribbean meals are always best when shared with friends!
