So it's like 10:20pm and we were all at home hungry and didn't feel like dining out. We looked in the pantry and the refrigerator to see what was available that could be cooked quickly. You know, like a Food Network 30 minute quick cook.
We decided on COCONUT CURRY SHRIMP, mashed potatoes, rice, fried ripe plantains and spinach. Yes, believe it or not in a Caribbean household that's considered a late night snack. We're going to operate under the assumption that everyone knows how to make mashed potatoes, fried ripe plantains, rice and raw spinach...if not, no judgment here, just comment and we’ll include easy instructions. Here's our recipe for the Coconut Curry Shrimp: Ingredients: •1/2 lb peeled & deveined shrimp •3 small potatoes- peeled & chopped •2 carrots- peeled & chopped •1/2 of large onion-peeled & diced •1/2 of a large bell pepper- peeled & diced •1 teaspoon of crushed ginger •1 tablespoon Jamaican blue mountain curry •Habanero pepper (1/2 of one)- chopped finely •1/2 can Grace coconut milk (make sure to shake the can before using) •4 garlic cloves (chopped finely) •3 sprigs of fresh thyme •couple pinches of salt •4 crushed pimento seeds On Medium high heat: -Add vegetable oil to a saucepan or Dutch Pot; enough to coat the bottom. - When the oil is hot, add thyme, then add chopped garlic, then add curry powder. Add chopped carrots, and chopped potatoes then stir. **These ingredients should be added 1-2 minutes apart. As each ingredient is added, cover the pot and wait 1-2 minutes before adding the next ingredient.** - Stir all ingredients & cover. Let cook for 7 - 10 minutes. - After about 7-10 minutes, turn the stove down to medium. Then *all at once*: add diced onions, diced bell peppers, finely diced habaneros, then let simmer for about 3 minutes. - Turn stove down to medium low. - Add shrimp, stir and let simmer for about 5 minutes. - Add 1/2 can of grace coconut milk, add water to help everything in the pot be fully immersed. Let simmer for about 10-12 minutes or until the liquid is of a thick gravy like consistency. - Remove from heat, let sit for 2-4 minutes. - - Serve when ready.
